Espresso Machine Reference Section - Napolitana 2 and Junior 2

To Prime the Napolitana or Junior when USING FOR THE FIRST TIME or accidentally running out of water.
1. Fill water tank
2. Place jug under steam wand
3. Turn steam knob and hot water switch on together until a steady stream of water comes out of the steam wand.

    Machine is now primed and ready to heat and use.

An important tip on using the Napolitana and Junior

If you have a current model I would recommend not inserting the procrema filter from the portafilter when making espresso. The addition of an expansion valve in the new machine has improved overall pressure so the use of the procrema filter is not necessary.


    Making Espresso with
    The Napolitana

1. Ensure machine is primed...see How to Prime above.
2. Turn the machine on with the switch marked with the lightning symbol. A red light on the switch shows power.
3. The orange light on the left side of the machine will light indicating that the machine is coming up to temperature.
4. Remove the porta filter (coffee dispensing cup) from the box and ensure the spout is at right angles to the handle.
5. Load with ground coffee. A good guide is a level scoop per cup or fill to 5 mm from the top edge of the porta filter. Compress with the tamper attached to the machine and ensure no loose grounds are on the rim of the filter.
6. Load the dispenser into the coffee shower and turn to the right until tight or at right angles to the face of the machine.
7. This machine will make either one or two coffee at the same time. Simply place the chosen number of cups under coffee dispenser. For one cup only place the cup under both spouts.
8. Once the orange temperature light referred to above has turned off (allow 20 secs) press the switch with the cup symbol to make espresso.
9. Espresso coffee will be dispensed until this switch is turned off again.
10. Turn the coffee switch off and turn the switch marked steam ON. Again the temperature light will re-light meaning the machine is re-heating for steam. While waiting for light to turn off place the jug under the steam wand and briefly turn steam knob ON to remove excess water from the boiler.
11. Pour milk into a stainless steel jug to the height of a third of jug.
12. After 20 secs. the orange light will turn off. Insert the steam wand all the way to the bottom of the stainless steel jug and turn the steam knob all the way to the left. As you turn the knob the steam pressure will increase. Hold your hand on the side of the jug until it is too hot to touch. When the jug is too hot to touch it is time to create froth by dropping the wand tip to just under the surface of the milk. As the milk expands drop the jug so that the tip sits just under the surface.
13. Turn the steam off with the knob and switch the machine off at the power switch.
14. Pour the milk into the coffee and add sugar as required.
15. To ensure froth is transferred from the jug to the cup give a slight kick to the pour as required.

    Setting the grinder on the Napolitana

    Use the complimentary espresso measure glass to set your grinder.

    The espresso formula is printed on the glass and can be used with a
    standard 7 gram coffee scoop. If the grinder lacks the range to achieve the desired fineness setting remove the top of the machine (two phillips head screws) and move the plastic lug seen on the grinder adjustment wheel.
    Grip lug with pliers and pull upward to move to new position.

Making Espresso with The Junior

5. Load the portafilter with ground coffee to 5 mm from the top. Compress with the tamper attached to the machine and ensure no loose grounds are on the rim of the filter.
6. Load the dispenser into the coffee shower and turn to the right until tight or at right angles to the face of the machine.

To remove used coffee from dispenser handle
If coffee filter stays in machine when removing handle simple turn hot water switch on which will soften and allow the coffee to fall out of into handle.
To clean Machine Soak wand in glass of tap water overnight to remove milk buildup. Use windex for outside.
Clean water and toothbrush for filters.
Essential cleaning procedures. RUN WATER THROUGH SYSTEM AND UNSCREW SPOUT UNDER COFFEE CUP TO SCOUR USED COFFEE OFF METAL.
If coffee flow for each spout is uneven ensure that holes in crema filter are in line with handle. Locate white rubber crema filter under metal filter with large holes facing upward.
Adjust until flow is even.
To achieve a high quality crema from the Napolitana/Junior.

Use high quality espresso bean. Coffee Select Ultimate is recommended.Adjust grinder to produce a grind which initally feels gritty yet leaves fine dust when rubbed between the fingers. If grinder is wound to it's extreme fineness and then rotated in the machine to null at the very beginning of the gind scale-an approximate setting to achieve this result is 3-4. Ensure the crema filter is in the portafilter and the large holes are up. Grind enough coffee into the filter until the amount will level off to be 4 mm from the top lip. Level off and ensure there are no loose grounds on the lip. Load into the machine and turn on. You will hear the pump pressure increase and the sound drop as resistance is created by the coffee. The pour should be heavy in consinstency and take a moment to leave the machine.

Observe the coffee in the glass against backlight. You may observe a wave in the coffee as seen in Guiness and a settling until a crema layer thickens on the surface. This result will give an intensity of taste and a syrup like consistency. To test also tip the glass to the side and see if a layer of crema is left on the glass. If not the consistency is not correct and the grind will need adjusting finer.

If your Napolitana/Junior doesn't heat up
the temperature light doesn't light up when the machine is turned on). Most likely the safety switch on the main thermostat has been thrown and needs to be reset. This is caused by the machine being left on for too long (usually overnight). Remove the top by removing two screws with a phillips head screwdriver. One screw inside the machine just in front of the water tank and the other behind the grinder. Remove the cover to see the parts shown in the attached image below. Please ensure the machine is not plugged in then press down on the red button shown with an arrow. Replace the cover and you'll be operational again.
